Brown Skin Foodie...is Alive!!!

See... (imagine me two inches from your face, fresh breath of course, whispering like I'm talking about a government conspiracy) I have these visions.  I'm doing restaurant reviews, cooking, and listening to music... maybe through some art in there and all is right with the world.  

Food Network is taking too long!!!  Taking too long discovering me and giving me my own show! I may not have all of the culinary prowess of Julia Child or Bobby Flay but I have a passion for good @$$ food!!!  That's enough, right?!  YES, IT IS!

My baby is being born next week with its first restaurant review.  I have so many ideas!  Maybe I can have viewer participation by occasionally choosing a restaurant to review for me.  I live in Dallas so all restaurants will be in the Dallas-Ft. Worth area.  Yes, I will drive to Ft. Worth.  I love downtown FW... it's so clean. *shrug* 

So be patient with me and hopefully my love for food will help you grow yours or try something new.

Gap-toothed Goddess Operations!!!



Ok... First of all... I GOT MYSELF A LIFE COACH!!!  No lie!  I've told a few people and only one person...I take that back two, were supportive and open to hearing about it.  I'm not ashamed to admit that at 29 my life is not where I want it to be nor is it anywhere near where I want it to be so I'm working with somebody to fix that.  I am so excited.  She is a lovely Black woman who is lovely to be around.  And affordable!!!  I won't lie, her price and her presence were what sold me.  She is so bright and I can only hope to absorb some of that.  Stay tuned.  I need to be working on my homework while I'm on here typing.  "If you change nothing, nothing will change."

Second, I have some operations going on.  Operation Clear Skin is one of them.  I have been dealing with acne and its effects since puberty.  So I'm working to not rid myself of it but to do better at controlling it.  The next operation is Operation Fine by 30.  My birthday is in December and I've been back in the gym.  I AM SORE!!! Like groaning when I walk sore...and I love it!!!

Fall Has Finally Arrived: Fall Fashion

Who doesn't love fall?  The oppressive heat fades away and allows us to cover up in awesome sweaters and fly boots.  Here are a few pieces I like for the fall...

Brown Skin Foodie: Spur Of The Moment Braised Chicken in Vodka Sauce

"Brown skin foodie! Hey, hey what you cookin'? Brown skin foodie! Hey, hey what you stewin'? Brown skin foodie! Hey, hey how do you peel? I like the way you stir. I like the way...I like the way you bake. ...And everybody on the avenue I know, when they see you, say there she is!"  *sing to the tune of my theme Brown Skin Lady*  (I'm corny, thought you knew)


While I was trying to figure out what tonight's meal would be, I was surfing Instagram. My hungry eyes stopped on a picture of chicken thighs simmering in tomato sauce. Yum! I have to give a quick shout out to @mr_chilltown (hope he doesn't mind) for giving me the idea for tonight's meal.

I don't have a recipe. I ran to the store and bought some chicken thighs and remembered that I had been daydreaming about what vodka sauce tastes like. I grabbed some sauce. Wolfgang Puck, to be exact. It was on sale. Snatched up some yellow squash, zucchini, green pepper, onions, and tomatoes.  I found a random recipe to give an idea of what braising is exactly them did my own thang. I'm a foodie. That's how I roll.
Turned down the Democratic National Convention, turned on a business webinar, heated the oven & the stove, and got busy! I seasoned the chicken the way I wanted to. You do the same. You know what you like. And while the chicken was in its first part of braising, which I believe is the browning/searing part, I sliced zucchini, yellow squash, roughly chopped the peppers & onions, seasoned all of that with garlic salt & pepper and tossed it in some olive oil. Threw that into a Pyrex and into an oven at 400 degrees. After the chicken competed it's tan, I pour the whole jar of sauce into the skillet, added some garlic salt, cinnamon, and a bay leaf. I threw the chicken back into the skillet, covered it and let it simmer for 30 minutes.  Oh! The veggies roasted for about 20 minutes then I added sliced tomatoes & threw everything back in there for 5 minutes.

It was GOOD! THANKS AGAIN, CHILLTOWN!

So I hear that models and regular people were actually going out to get their gaps WIDENED!!!  Say what?!  I've heard of people rushing to get their gaps closed.  People thought gaps were hideous!  I had an ex...you see that, right... ex tell me more than once that my gap was a defect.  That I should smile with my mouth closed. (That's my transparent moment.)  So reading a article, not even sure how I got there, about gaps being the beauty trend of 2010 put giddy bubbles in my water.  I just wish I saw more images of Black women online with gap teeth.  I understand that the standard of beauty in the US is any and everything non-black but you have to acknowledged the original exotic women.

Keeping It Right & Tight: #InstaFitChallenge


So some folks and I were chit chatting on Instagram and the thought hit me.  Have an Instagram Fitness Challenge!  I am trying to listen to my first thoughts and inner voice without hesitation.  I already have a few people amped about participating.  You should get in on it, too!!!  The first challenge will be the first week of September.  I have a few ideas of what the first one will be.  If you have an exercise you love to do, tell me and I'll add it to the challenge.  There will be AT LEAST two challenges a month, unless stated that it's a month long joint.  I'm amped!  Stay tuned for what the first challenge will be.  Oh! Brown Sugar Beauty: Natural Beauty

Brown Skin Foodie: General Tso (or is it Tao) Chicken


First things first, I need to get better with my presentation.  You would think that as much as I watch the Food Network that I would have that mess down.  I’ll get better.  I promise myself, I will.  I love food too much to half-@$$ the presentation part.  With all of that being said, these pics may not be the best.  BUT the food was delicious.

I’m on Pinterest.  I’m on there under my name so if you want to follow me that can be arranged.  Anyway, one of my boards is titled Brown Skin Foodie.  What do you know?!

*gasp* Really?!

And on that board I have tons of recipes, along with a few other things, that will more than likely end up on this blog.  The recipe I have been meaning to try for the longest was one for Baked General Tao’s Chicken.  To give credit where credit is due, the recipe can be found on this site: Baken General Tso's Chicken and is as follows...

2 -3 pounds boneless chicken thighs or breasts, cut in strips
1 egg + 2 tbsp. water whisked together to make an egg wash

Combine

1 cup flour
½ tsp. black pepper
¼ tsp. cayenne pepper
3 tbsp. ground ginger
2 tsp. salt

Dip the chicken pieces in the egg wash then dredge them in the flour mixture. Place on a lightly oiled baking sheet and lightly drizzle or the tops with a little more olive oil. Bake at 375 degrees F for about 25-3o minutes. Flip the pieces at half way through the cooking time.

While the chicken is baking, prepare your sauce. Don’t walk away from this sauce; it gets very hot when making the caramel base and can burn easily so pay careful attention while cooking it.

In a small bowl, mix together

4 tbsp. soy sauce
4 tbsp. rice wine vinegar (white wine vinegar is fine in a pinch)
¼ cup water
2 tbsp. toasted sesame seed oil
2 tbsp. hot chili paste or sauce (use more or less to taste if you don’t like it very hot)
½ tsp. salt
2 tsp. corn starch
3 cloves minced garlic
3 tbsp. freshly grated ginger

Set this mixture aside

In a medium saucepan boil together

1 cup sugar
¼ cup water

Boil this over medium heat, watching constantly until the caramel starts to turn a light amber color and you can begin to smell the caramel. When it reaches this stage, give the other ingredients in the bowl a quick stir to make sure the corn starch is dissolved then add it all at once to the hot caramel.

Be careful at this stage because this sauce can foam up considerably for a few seconds and it is very hot. Simmer for only few minutes and remove from the heat and allow to cool down slightly.

Toss the sauce with the cooked chicken pieces and serve over plain steamed rice.”

First of all, when I read the sugar syrup part I was a little taken aback.  I am trying to be healthier in my eating, hence the baked version of a fried Asian classic.  This sugar just cancelled the whole thing out.  On top of that, I had to do the syrup twice because it never turned colors and started to harden on me. Next time I make this, I might try agave syrup.  It will change the taste a little but it won’t give me Diabetes.  Secondly, I HAD NO GINGER!!!  I could have sworn there was some ground ginger in this place but nooooooo, there wasn’t and every other minute, I stop stirring to look in the cabinet.  Lookin’ like this…

So I used dry mustard instead.  Gotta do what you gotta do.  Lastly, I was out of brown rice. Smh… a sista can’t win for losing.  Luckily, we had some Instant Jasmine rice.  All I had to do was throw is in a pot of boiling water and let it cook for 10-15 minutes.  Viola!  General Tao’s Chicken.  It got rave reviews in the home. :o)  See some of my pictures below.

It was sweet with a small hint of spicy but it tasted just like any Chinese restaurant you might frequent.  Try it.

Brown Skin Foodie: Peanut Butter Chocolate Chip Cookies


I love food.  I do.  Imagine a seen from Kenan & Kel.  Remember how Kel loved him some orange soda?

Who loves food?  I love food.  Is it true? Mmm-hmmm... I do. I do. I do-ooh.  

I love food and I love to cook. (Add the brown skin and you have THE BROWN SKIN FOODIE)  Because of these two things, I have to LIKE working out but that's another post.  And I'm so glad that people like me who love food in all its glory have a nice title, "foodie".  It sounds so much better than glutton or greedy @$$.  

So yesterday, my sweet tooth got to kicking and I thought to myself, Self, we still have some chocolate chips from those chocolate covered strawberries you made.  You want some cookies?  Yes, let's make some cookies!

I searched the net, internet that is, for some recipes.  I lost my chocolate chip recipe from Martha Stewart and they were dreamy cookies.  I check that pantry and what do you know... PEANUT BUTTER!!! It's on now!  I only had about a cup of chocolate chips.  Yes, I poured those bad boys out into a measuring cup to make sure I wouldn't be wasting my time.  There is nothing worse than having a craving and not having everything you need to get the party started.  Boils my blood.



Anyway, I bump into this recipe from Canarygirl.com.  "The Yummiest Peanut Butter Chocolate Chip Cookies".  Word?  The yummiest?  I must try them.  I pulled all of the ingredients out and got busy.  The recipe is as follows:

"Ingredients:
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
3/4 cup peanut butter
1 cup flour
1 teaspoon baking powder
a pinch of salt
1 cup chocolate chips
Preparation:
First of all? I recommend doubling the recipe.
You won’t regret it, though your butt might. lol
Preheat oven to 375ºF (175ºC).
Line a cookie sheet or two with parchment.
Cream butter and sugars until creamy, then add egg and vanilla and beat until smooth.
Add Peanut butter and continue to beat until combined.
Add flour, baking powder and salt and stir to combine.
Add chips and stir again.
Drop small spoonfuls of dough onto parchment (you should get a dozen per sheet).
Bake 12 minutes or until just golden.
Remove from oven and allow to rest on the sheet 1 minute before removing with a spatula.
Serve with gallons and gallons of milk. :D
If you have kids, hide a stash for yourself, because these only lasted 2 days in my house. And I doubled the recipe. I had 3 cookies out of about 6 dozen that were baked."
I did not double the recipe.  This recipe made more than enough.  And they were delicious.  See a couple of my pictures below.


I still have quite a bit left.  Hopefully, they don't last too long. ;o)

Welcome...

Good day, good people. It's a beautiful day in Zamunda and I am truly blessed.  I hope you all feel the same.

I decided to start a new blog. One where all of the thoughts that I wish to share can be shared.  Things like fitness, fashion, beauty, health, and some worldly issues will be discussed on this blog.  It's been so long since I have blogged that I feel like I have nothing to say as I type this intro.  It'll come to me so I ain't worried. (I meant to say "ain't")

Why Gap-toothed Goddess?
I am a goddess with a gap-toothed smile...and I'm fly. It had to be titled as such.

Anyway, I hope you enjoy what I post and share your own thoughts.
